Chop the cherry tomatoes into cubes, and finely slice or cube your choice of smoked/cured meat into small pieces. Next, cut the bread into cubes. Set aside. If you are using a block of Parmigiano Reggiano, shred it and set it aside. If you are using store-bought shredded or flaked Parmigiano Reggiano, then proceed to the next step.
In an oven-safe dish (about 16x11x4 cm), add the tomatoes, garlic powder, and olive oil, and mix well. Place the oven dish in the air fryer and bake at 180°C for 5 minutes.
In a mixing bowl, add the eggs, salt, ground black pepper, and milk. Whisk the egg mixture well. Then, add the Parmigiano Reggiano. Mix everything until it is well incorporated.
After 5 minutes, remove the oven dish from the air fryer with caution, as it will be hot. Add the cubed bread and the smoked/cured meat pieces, and make sure it’s evenly placed. Then, pour the egg mixture over it. Return the oven dish to the air fryer. Airfry at 180°C for 10 minutes or until golden brown. Take caution while eating it, as it will be piping hot.
