Breakfast Strata, a.k.a. breakfast casserole, is technically a savoury bread pudding.

If you’re anything like me, you know that cooking up a storm is not possible in the morning because we need time to set into normal programming—so easy, low-effort breakfasts are our go-tos. And as someone who is just that—this recipe ticks those requirements. It is easy, quick, filling, and it tastes so good—like, sets you in a good mood to start the day—no kidding.

Also, the best part about this recipe is its versatility. You can really switch the meat or vegetables according to what you have at hand, and it will still taste absolutely delicious! This recipe is also perfect for making for family or guests—just adjust the ingredients to fit the number of people or servings.

2 Cherry Tomatoes cubed
1tsp Garlic Powder
A pinch of Salt
2tsp Olive Oil
2large Egg
1⁄2tsp Salt
1tsp Ground Black Pepper
3tbsp Full Milk
20grams Parmigiano Reggiano shredded/flakes
2slices White Bread cubed
30grams choice of smoked or cured meat cubed or finely sliced

Directions

Prep the Ingredients
Chop the cherry tomatoes into cubes, and finely slice or cube your choice of smoked/cured meat into small pieces. Next, cut the bread into cubes. Set aside. If you are using a block of Parmigiano Reggiano, shred it and set it aside. If you are using store-bought shredded or flaked Parmigiano Reggiano, then proceed to the next step.

Airfry the Tomatoes
In an oven-safe dish (about 16x11x4 cm), add the tomatoes, garlic powder, and olive oil, and mix well. Place the oven dish in the air fryer and bake at 180°C for 5 minutes.

Make the Egg Mixture
In a mixing bowl, add the eggs, salt, ground black pepper, and milk. Whisk the egg mixture well. Then, add the Parmigiano Reggiano. Mix everything until it is well incorporated.

Assemble & Airfry the Strata
After 5 minutes, remove the oven dish from the air fryer with caution, as it will be hot. Add the cubed bread and the smoked/cured meat pieces, and make sure it’s evenly placed. Then, pour the egg mixture over it. Return the oven dish to the air fryer. Airfry at 180°C for 10 minutes or until golden brown. Take caution while eating it, as it will be piping hot. Enjoy!
Please note that each air fryer model can vary in temperature, so you may need to adjust the cooking time accordingly.

Notes
Bread, Meat & Vegetables: Feel free to use whichever bread, meat (such as salami, bacon, etc.), or vegetables (such as spinach, courgette/zucchini, etc.) you have at hand. But do keep a mental note that different vegetables may take more or less time than the air-frying time mentioned. Make sure the meat and vegetables you plan to use as substitutions are chopped into small pieces, depending on their size. Find pairings that best suit your taste buds.
Storage: It is advisable not to store this and to make it on the day you intend to consume it, as it tastes best fresh.
