This is also one of the first recipes I ever made wayyyy back when I started cooking, and honestly, I used to eat this every. single. day. In this week alone, I made this twice. It takes under 20 minutes and it’s just that good.

    Gyeotjeori 1 small apple or ½ an apple (peeled, Gyeotjeori

1 small apple or ½ an apple (peeled, cored and chopped into small cubes)
½ mandarin
1 spring onion (sliced finely)
3 tsp of cayenne pepper (adjust depending on heat preference)
1 ½ tsp of fish sauce
1 tsp of sugar
1 garlic clove (minced)
1 tsp of light soy sauce

1. Place everything in a bowl and mix well. Taste to check, and if it’s good, enjoy it as a side with rice and your favourite protein!

Airfryer mini deep dish apple cookie

Apple Cookie
50 g of all purpose flour 
33 g of dark brown sugar
20 g melted unsalted butter 
1 large egg
1 small apple or ½ an apple (peeled, cored and chopped into small cubes and reserve 1/2 to make sauteed apples)
¼ tsp of baking soda
pinch of salt
splash of vanilla extract

Sauteed Apples
½ reserved apples 
8 g tbsp of unsalted butter 
7 g tbsp dark brown sugar
½ tsp of ground cinnamon

Whipped Cream Cheese 
40 g of cream cheese (room temperature)
5 g of powdered sugar

1. Grease the mini deep dish with a little butter or oil spray and set aside.
2. In a mixing bowl, combine all the apple cookie ingredients and mix until a batter forms.
3. Pour the batter into the dish and air fry at 165°C for 10–15 minutes, or until a toothpick inserted comes out clean.
4. While it cooks, sauté all the sautéed apple ingredients in a pan until the sugar melts and thickens. Remove from heat and set aside.
5. In a bowl, whip the cream cheese with powdered sugar until smooth. Switch to a spatula and fold in the sautéed apples.
6. Once the cookie is done, let it cool for 5–10 minutes, then add the frosting and enjoy!
