Sgroppino, which means “untie,” hails from Venice, Italy. Dating back to the 16th century, it is often enjoyed as a light and refreshing after-dinner drink or palate cleanser, much like sorbet. The name “Sgrappino” is derived from ‘sorbetto’ and ‘grappa,’ highlighting its primary ingredients. Traditionally, the Sgrappino is made with lemon sorbet, Prosecco, and a splash of vodka or grappa. The mixture is whisked or blended together to create a frothy, almost creamy texture that balances the tartness of the lemon with the effervescence of the sparkling wine from the Prossecco.

The Pink Sgroppino is a modern variation of the classic Sgrappino, serving as a contemporary twist on the traditional drink. The Pink Sgroppino is distinguished by its pink hue, achieved by substituting lemon sorbet with raspberry or strawberry sorbet. Additionally, pink Prosecco or a splash of rosé wine might be used to enhance the colour and flavour profile, adding a fruity sweetness.

SUBSTITUTIONS

Alcohol

For this recipe and all of the Summer Rosé Blends series, alcohol-free rosé wine will be used. Disclaimer: although alcohol-free rosé still contains 0.05% alcohol, where I live, any drink with alcohol below or at the 0.05% threshold is considered and sold as alcohol-free. Hence, this drink is not suitable for children, anyone below the legal drinking age, or anyone who strictly does not consume alcohol. However, feel free to sub the alcohol-free rosé with actual rosé if you would like.

STEPS ON MAKING PINK SGROPPINO

Ingredients for Pink Sgropinno on a working surface

Begin by prepping the lemon. Cut one lemon into halves, and using a citrus reamer, lemon squeezer, or good ol’ squeezing with clean hands, squeeze the juice from half a lemon into a small bowl and set it aside. You can reserve the other half of the lemon for other uses.

In a smoothie blender or regular blender (be sure to check if your blender can handle frozen fruits, ice, or alcoholic drinks), add the lemon sorbet, lemon juice, sugar, rosé, and strawberries (you can use frozen or fresh). Blend until everything is well combined and smooth.

Pour the Pink Sgroppino equally into two wine glasses. Optionally, you can add a garnish to the rims of the wine glasses. Cut a slice of lemon from the reserved halved lemon, cut the slice into quarters, and make a slit in the middle of the fleshy part of the quartered lemon pieces. Then, attach the quartered lemon pieces to the rims of the wine glasses.

Ingredients
  

Pink Sgroppino

  • 300 grams Lemon Sorbet store bought
  • ½ Lemon juice only
  • 30 grams Fine White Sugar (Castor Sugar) reduce to 15 grams if less sweetness is preferred
  • 200 ml Rosé (Alcohol free) Add 50 ml more, if the pink sgroppino is too thick
  • 4 Strawberries fresh or frozen

Garnish (on the rims)

  • 1 slice lemon quartered

Instructions
 

  • Cut a lemon in half and squeeze the juice from one half into a small bowl.
  • In a blender, combine the lemon sorbet, lemon juice, sugar, rosé, and strawberries (fresh or frozen). Blend until smooth.
  • Pour the Pink Sgroppino equally into two wine glasses.
  • For garnish, cut a slice from the reserved lemon, quarter it, and slit the middle. Attach the lemon pieces to the rims of the glasses.
  • Your delicious Pink Sgroppino is ready to be enjoyed!
