The name “Sgrappino” is derived from ‘sorbetto’ and ‘grappa,’ highlighting its primary ingredients. Traditionally, the Sgrappino is made with lemon sorbet, Prosecco, and a splash of vodka or grappa. The mixture is whisked or blended together to create a frothy, almost creamy texture that balances the tartness of the lemon with the effervescence of the sparkling wine from the Prossecco.

The Pink Sgroppino is a modern variation of the classic Sgrappino, serving as a contemporary twist on the traditional drink. The Pink Sgroppino is distinguished by its pink hue, achieved by substituting lemon sorbet with raspberry or strawberry sorbet. 1⁄2 Lemon juice only
30g Fine White Sugar/Castor Sugar reduce to 15 grams for less sweetness
200ml Rosé (Alcohol free) add 50 ml more, if the pink sgroppino is too thick

Begin by prepping the lemon. Cut one lemon in half and squeeze the juice from one half into a small bowl using a citrus reamer, lemon squeezer, or simply your hands. Set it aside. Reserve the other half of the lemon for other uses.

In a smoothie blender or a regular blender (ensure it can handle frozen fruits, ice, or alcoholic drinks), add the lemon sorbet, freshly squeezed lemon juice, sugar, rosé, and strawberries (either frozen or fresh). Blend until smooth and well combined.

Pour the blended Pink Sgroppino evenly into two wine glasses. For an optional garnish, cut a slice from the reserved lemon half, quarter it, and make a small slit in the fleshy part of each quarter. Attach the quartered lemon pieces to the rims of the wine glasses.
